Preparation: wash, and the tomatoes. Put them in a frying pan with olive oil, salt and pepper and let them . Mix the salted pork with the tomato and let them boil. In a plate we the eggs and put them in the frying pan being careful not to let them , while with a wooden spatula we try to them over. the eggs, a little more salt and pepper and stir with a wooden spoon. for about 3 minutes, until they set but still remain juicy, stirring gently every 30 seconds. Don’t overcook or the eggs will be . Serve immediately on plates, with a few oregano leaves and with some olive oil. some extra pepper on top and enjoy!
Note: the heat should be high.
